Dry ounces vs fluid ounces
"8 oz of flour" means weight (227 g), but "8 fl oz of milk" means volume (1 cup, 237 ml). They only coincide for water-like liquids. When a US recipe says "ounces" for a dry ingredient, weigh it; when it says fluid ounces, use a liquid measuring cup — or convert through grams to cups for the ingredient.
